I love cooking! Whether it be homemade chocolate chip cookies, spicy salami rigatoni pasta, cake bites, you name it, I most likely would love to make it. My brother-in-law sometimes joked with me that I had the wrong major and that I should go to culinary school instead. I don't know if that was a hint that I needed more helpful hints for cooking, or just because I love to cook. Anyway, while I may not be the best cook, I definitely enjoy it.<br />

This week's latest creation was my own version of a homemade pan au chocolat. We get these all the time when we go to Paris, and my Dad used to bring them home from a bakery in Provo while he was a BYU bishop. Anyway, simple, oh so simple, yet delicious.<br />

How to make a Pie in a Jar<br />
Wide-Mouth Jars: You want short, squatty ones with sides that go straight up and down from top to bottom.<br />

1. Roll out a 1/4inch thick piece of dough into a 8x8 inch square. Using the metal ring from the top of your jar as a cookie cutter, cut out 4 circles of dough.<br />

2. Use the rest of the dough to line the jars. Break the dough into small pieces and press them along the inside of the jar, making sure the dough is pressed all the way up to the top of the jar.<br />

3. Combine prepared fruit, sugar, flour, and seasoning. Fill the pies. Each pie will hold approximately 1/2 cup of pie filling.<br />

(Apple Pie Filling:<br />
2 cups diced, peeled tart green apples<br />
1 tablespoon fresh lemon juice<br />
2 tablespoons sugar<br />
2 tablespoons flour<br />
1/4 teaspoon cinnamon<br />
1 tablespoon butter, chopped into small pieces and divided among four pies<br />
Toss all ingredients together and stir to combine. Divide mixture among the pies and dot the pies with butter)<br />

4. The dough circles you set aside will need vents so steam can escape. Use a knife to make a couple of slits or a tiny cookie cutter to make it decorative. When your topper is ready, slip it onto the top of the pie. Gently press down so the edes of the circle are completely inside the jar. Use your fingers, or a fork, to press the dough from the top into the dough on the edges of the jar to seal. If desired brush the top with a little melted butter and a sprinkle of sugar.<br />

Once finished the pies can be kept in the freezer for 2-3 months.<br />

To cook from frozen, remove pie from freezer and place on a baking sheet. Remove both the metal ring and the metal top. Place the pie in oven and then turn heat to 375 degrees F. Bake for 50-60 minutes or until tops are golden brown.<br />

Afterall, we are poor and lowly college student.<br />

Supplies:<br />
Canvas: $7.50 for 2<br />
Spray Paint: $6 for 3<br />
Stencils: $4<br />
<br />
Luckily we already had the spray paint from a previous project, so this project, split between the two of us cost us each about $6 each, not too shabby.<br />
<br />
We started by looking up some sort of phrase we would care to look at each day. Terra, being the wonderful intellect that she is, has a love for Emerson. She found a quote and we got to work.<br />

Both fitting of our personalities. Terra picked yellow, and I went for blue. Everything I own is blue.<br />

After waiting 10 minutes for those to try, we pulled out the stencils. Here comes the tricky part: spray painting the letter without getting the rest of the board. Luckily we had my handy dandy Mom around and she suggested cutting a square out of a magazine big enough to see the letter through which we could put on top of the stencil, protecting the rest of the canvas.<br />

6 cups cold water<br />
4 juicy limes (Smooth, thin-skinned limes are the juiciest and least bitter)<br />
6 tablespoons sweetened condensed milk<br />

Mix cold water and sugar very well and chill until ready to use. This step can be done ahead of time.<br />
2. Wash limes thoroughly with soap; you need the soap to get the wax and pesticides off the limes because you're using the whole lime. Cut the ends off the limes and then cut each lime into eights.<br />
3. Place half the limes in your blender. Add half of the sugar water, place the lid on your blender and pulse 5 times.<br />

So here's how you do it:<br />

<ul><li>2 Eggs</li>
<li>5-6 French Fries (Chips)</li>
</ul>Directions:<br />

<ol><li>Bake the Chips (This can be done by either buying store bought frozen fries and cooking them in the oven, or cutting up your own potatoes and deep frying them) After done baking, keep in the oven or reheat in the microwave to keep warm.</li>
<li>Whisk the eggs.</li>
<li>Preheat the skillet on medium high.</li>
<li>Place the chips in the skillet, and pour the eggs on top (spreading the eggs evening across the chips is preferable, although for the most part they even out themselves).</li>
<li>When the bottom half of the "omelet" is cooked, flip over and cook on the other side until cooked thoroughly. </li>
<li>Remove from pan when cooked thoroughly and serve with salt, pepper, and ketchup. </li>

When I got home, things got a little crazy, and the last thing on my mind was to blog about it. The trip home went great! We made each of our flights (some of them just barely!) and made it home with the causality of only one bag which was left in Amsterdam. First stop on the way home, Cafe Rio! Oh how we missed our Cafe Rio. That night I hung out with the family playing games like Settlers of Catan, and talking. About 2:00am that morning I woke up with a furious stomach who didn't agree with being back in the states, and continued throwing up for the next 16 hours, missing my orientation for nursing school which was scheduled the next day. Luckily, after about a day I was able to rest and continued sleeping and resting for the next few days.<br />

I had the most wonderful experience in Africa. I miss it daily as I look at the pictures posted all over my room, on my laptop, and talk to other friends enjoying their own experiences elsewhere in the world. Luckily I have still been able to keep in touch with friends from Tanzania (thank goodness for skype and facebook!) and miss them all very much! What I miss more than anything though, would have to be my kids. They are in my dreams almost every night and I miss their laugh's, attitudes, and most of all, their hugs and kisses! I hope that whoever is out in Tanzania right now is taking care of them for me.<br />

If anyone is interested in volunteering abroad, this was the way to do it! It was affordable, and edifying. Overall my trip cost me $3000, not including spending money. My plane ticket was $1600, the hostel (which included and amazing breakfast and dinner) was $1100 for 9 weeks! and then you're required to purchase a visa and a volunteering permit totaling about $250. The hostel was great with setting up volunteering experiences of every kind whether you're interested in working with children, adults, disabled children, schools, orphanages, administration, business, and construction, they had it all. I loved not having a tour guide and being able to explore and learn the language on my own (well with the help of a few friends), but overall, fending for myself, jumping on the back of trucks and bikes, and tasting the true african food in little huts and restaurants, etc. I would highly recommend this adventure to everyone! It definitely broadened my perspective, was a great volunteering and growing experience, as well as eye opening.<br />

Today while we were at our orphanage we let Mama Cecilia know that we would be leaving in two weeks on May 2nd and that M'Liss and Cami would be gone for a week in Zanzibar. She started crying and telling us how much she would miss us and of course as we are sitting there with all of the kids, we three start crying as well. The little kids, especially Juma, were having fun pointing and laughing at us, because I'm sure four grown ups crying in a room full of little kids is a bit of a funny sight, usually its the other way around. I've realized that I am going to miss my little ones so so much! <br />

Juma, Juma, Juma. What to say about him. He can be the sweetest boy, yet he can also be such a pill, but do you ever really get one without the other? He loves to fan us with books while we get there, and often times he is my little translator. When he knows I'm getting frustrated with one of the kids he often sits them down and points at them speaking in swahili, I'm assuming telling them to "sit down! and listen to the teacher!" ha. I'm not sure what he says, but I love that he tries to help.<br />
<br />
Shamimu. She is the sweetest little girl you've ever laid eyes on. She never yells, she waits her turn, and she's brilliant! She is the smartest one of them all. She knows all of her colors, her numbers, and most of her letters. She is always the first one to answer, or is a cheat and whispers the answers to the other kids when they don't know it.<br />

Jessica has the biggest smile on this earth. It literally stretches across her entire face, I love it! I have a million pictures of her because her smile is so gosh dang beautiful. When we first got there she was so stubborn, she didn't have to listen to any one, and my goodness, if she didn't want to tell you the answer, she didn't have to tell you the answer. We have made so much progress with her though and she's turned right around and shouts out all the answers and is so obedient and considerate. She loves to be held, and I love to hold her, it works out perfectly.<br />

Bonny. Everyone knows that he is my favorite. He is the cutest, funniest, quirkiest little child to roam the planet. I love when he goes off on his little spills and he talks and talks and talks in swahili and of course we don't understand him. He also has a tendancy to lunge at me, perfectly trusting that I'll catch him no matter what. I love throwing him in the air and reading with him. He also made a huge improvement over the past while. He knows the colors better than anyone, and thank goodness, we've finally got him sitting up straight instead of on his head the entire time.<br />

Anitha, I wouldn't exactly say she has made a whole lot of progress, but she definitely is up there for the most entertaining. It is always a gamble as to what type of mood she'll be in when we get there. If she's grumpy, she's grumpy and there is nothing we can do about it. She doesn't like listening to people or being told what to do. However, she gets in these quirky attitudes where she walks around singing and dancing and you can't help but laugh at her. <br />
<br />
Lastly, I'll miss Mama Cecilia. She is the most gracious, brave, and determined women I've ever met. She is in her twenties, working on a masters degree, and raising five children. Can you imagine that? And she still finds the time to get us treats or presents for coming to visit, whether it is a necklace, banana's, or cucumbers, she always shows her gratitude. I love her so much and respect what she's doing with these kids. <br />

Each week there is something new or exciting. My favorite part of this week has been my adventure to Newlands to work at Born To Learn. Born to learn is a school that was set up by a group of volunteers about a year ago out in a small village about forty minutes away from Moshi. The kids that attend school there are from ages 6 to 14 or 15 years old and, of course, are so adorable. <br />
<br />
Monday morning I woke up early, had breakfast, and walked out the door with Huw and Fredrik. We walked all the way through town to the opposite side (about 35 minutes), down a dirt road (10 minutes), and waited for a truck (20 minutes). The truck we caught was pretty big about the size of a truck that would carry tons of bricks or wood back home, and rode on that with a bunch of locals down a dirt road, which eventually turned into a paved road, past all of the acres and acres of sugar cane until we got to the junction (30 minutes). P.s. All the drivers here drive way way to fast and really crazy. I am convinced I will be hit by a car, or at least get into a car accident by the time I leave, I'm surprised it hasn't happened yet. Anyway, at the junction we proceeded by catching a few bike taxi's which are guys with small racks tapped onto the back of their bike (10 minutes). Ha so fun! I loved it! They rode us down to the middle of town where we then walked down the street to the school (10 minutes) totaling about 2 hours in travel time to get there. <br />
<br />
Once we got there we took about six of the younger kids aside to work with them on writing, math, and let's face it, play around. Babu was my favorite. He was about 6 years old and loved to dance. We could barely get him to sit down he was dancing and singing the whole day. It doesn't matter where you go in this country, you'll find an adorable little boy or girl. After school the little kids took our hands and walked us back to town while we sang lion king the whole way there and the kids did their best to teach me a bit of swahili. I can't remember a think... ha We got lost a little bit in the village, but eventually made our way back to the road where we started back for the junction hoping to catch a truck. While we were talking tons of little school kids from the private school started walking behind us and I kept turning around to peek at them and they kept laugh so we all put our hands out and in a split second we each had four kids attached to each hand. I will miss that! Where else can you walk down the street and hold a million little darling children's hands? Ah...I get sad just thinking of it. <br />

While we were talking a brick truck passed by which we ran and caught up to, and jumped on while it was still moving resulting in a few cuts and bruises but no major damage. We road the brick truck all the way back to Moshi where we got off and walked back to town, had lunch, and headed back to the hostel. Can I just explain to you that there is one thing that I love oh so dearly here, and that would be an ice cold fanta, out of a glass bottle, in 100 degree whether. Hardly anything can beat that. Anyway, that was my adventure of the week so far, and hey! It's only Wednesday, this week has just started. <br />

<div class="MsoNormal">This week has been pretty awesome. This last weekend was really fun! M’Liss, Cami, Fredrik, Matt, Julie and I all went to the hot springs which are about an hour and a half away on the most horrible roads here. You wouldn’t believe the drivers here. We have a certain taxi driver, Juma, that we always call and he’s got a little, yet really nice black car and he drives it through things I would never drive my truck through. Its incredible. The road to the hot springs was absolutely horrible and we even drove straight through a forest in part of it because the road was blocked. The hot springs were this little oasis in the middle of the desert but they were way cool. It was crystal clear, turquoise blue water that was pretty warm. <br />

</div><div class="MsoNormal">After the hot springs half of us continued on to Arusha for the weekend to go the circus! Luckily we met up with our friend Ben who has been here for about 8 months now and speaks way good Swahili so he helped us girls get a good hotel room and such. We went out to dinner and the circus was really cool. It wasn’t an animal type circus like we have at home though. It was a lot of gymnastics and weird tricks like spinning tables on your feet and such. My favorite part of the weekend though was riding on a motorcycle taxi! We got 3 bikes for the 5 of us for 3000 tsh each so like $1.50 which was sweet. It was so much fun! I want to ride one again.</div><div class="MsoNormal"><br />

</div><div class="MsoNormal">We ended up going to church on Sunday and we felt all special and cool because we actually remembered how to get there on our own without the missionaries. The ward is really great but its really different than I would have expected. Its not one of those situations where these people put so much effort towards going to church like you might think, its pretty convenient for most of them. But its different in so many other ways. The members there don’t know a whole lot about the gospel, yet they are still so faithful. They aren’t very educated and have so many questions all of the time. We talked for like 15 minutes the other day about the cross and why we don’t use it so much in our church because it was simply a tool used to kill the Savior, nothing more. </div><div class="MsoNormal"><br />
</div><div class="MsoNormal">After church we met up with Fredrik and Ben and made our way back to Moshi. We actually got extremely lucky with our bus because it barely ever stopped and they didn’t make us squish five people to a bench like they usually do. </div><div class="MsoNormal">Yesterday was also a really great day! Yesterday it was cold all day long! I actually wore a long sleeve shirt for most of the day. It was absolutely incredible. It also rained for most of the day and so Fredrik and I, in our boredom, built the most incredible card house you have every seen in your life. I’ll try to show pictures soon. Basically the entire house was standing on two cards. Awesome.</div><div class="MsoNormal"><br />
</div><div class="MsoNormal">I know I say it every time but I really am loving it here! My kids are learning so much and I am so proud of them! They know 1-10 and all of the numbers individually, and how to count and how to add! They also know their colors in English and Swahili and A-I. It breaks my heart though because since Mama has been gone for the past few weeks her brother is watching over them and feeding them, but none of them have showered for at least a week and they all smell so bad. We wanted to help them shower but the shower here isn’t working and neither is their toilet. It’s horrific what these children have to live in, yet at the same time it’s so much better than where they could be. If they haven’t showered by the next time we see them we are taking them back to the hostel and cleaning them up a little bit. Other than that, everything is going well and I’m looking forward to a nice relaxing weekend after such a long, busy week. </div><div class="MsoNormal"><br />

I’ve taken a few days off from my project because of going to Arusha to see the Rwanda Genocide trials, and also because I wasn’t feeling very well a few of the days. Its not so much that I felt really sick, but its so miserable to be outside of the hostel when you aren’t feeling well, and half my kids are sick, and it’s a 4-5 mile walk so I didn’t think that’d help in getting me better. Plus, it’s the beginning of the rainy season here so everyone is getting a cold. Anyway, I wasn’t feeling very well, but it wasn’t too big of a deal, I just didn’t want to risk getting worse. <o:p></o:p></div><div class="MsoNormal"> The Rwanda Genocide trials were pretty interesting. It was difficult because everyone spoke different languages so in order to ask a question to the witness and get a response it took about 3 minutes. It was interesting though to witness it. Afterwards we went to lunch at Café Bamboo or something. We sat in the “garden” which is really a gravel pit on the side of a building covered with a tarp and a few fake plants to brighten it up. Ha The food was delicious though! The meat here is pretty sketchy and so you usually don’t find much good meat, but this place was great! I got enchaladas which reminded me of home just a little bit, and my friend Fredrik got pork which was to die for! I’ll definitely be going back there. After lunch in Arusha we took a few hours to go shopping around the Arusha Maasai market. <o:p></o:p></div><div class="MsoNormal"><br />
</div><div class="MsoNormal" style="text-indent: .5in;">The Maasai, for those of you that don’t know, are a tribe here in Africa. They live in about the most desolate way imaginable. No power, no electricity, they live in huts literally made out of mud not even big enough to stand up in. They wear clothes around their bodies in bright colors like red, and shoes made out of bike tires. Wont lie, they are a bit creepy looking and aren’t the kind of people you want to get too close to but they are usually pretty nice. They have a great craft market too! They make all sorts of creations ranging from jewelry, scarfs, shoes, paintings, and sculptures. <o:p></o:p><br />

The rest of the week has been spent at placement, swimming at the YMCA a 5 minutes walk away, walking around town getting ice cream (never even close to as good as the US) or sitting out back talking. One of the other updates of the week however was going to the Watering Hole. The Watering Hole is a bar run by mzungu’s (western’s/white people) and it is a little bit nicer. At the Watering Hole they have an outside cinema in which they show movies every Thursday. My friends and I booked it out on Tuesday, however, in order to have a Lion King party (we’ve all been craving the movie since being here). It was the cutest place! A wooden patio covered with a thatched roof and benches and camping type chairs spread out with a projector and a sheet in order to watch the movie. I’ll have to go back and get pictures because it was so cute and African. We slid all over the road, and I concluded it was better to just not watch where we were going. Besides, I was squished between Ben and Frederick in the back, so if anything really happened at least I had some padding right?<br />

The hike was through tons of the green green brush and trees along this dirt path just wide enough, with rocks you have to climb down, and steep drop offs on the edge. The water at the bottom was so warm and blue! Its was gorgeous! Oh and there were these two little canoes at the bottom made out of wood that looked like it was patched together and they were half sunken. While we were swimming some local came and just hoped in, bucketed the water out, and paddled away in it. I hope he didn’t drown in it.<br />

</div><div class="MsoNormal" style="text-indent: 0.5in;">That night we had an awesome BBQ (bbq’d goat, fried rice with potato and steak mixed in, and chips (fries, but better!)) and played games like smirt, and the worst-case scenario survival game and such. The next morning we went hiking and I literally felt like I was searching through the jungle. We didn’t really follow a trail and were constantly getting cut up by brush (the trees here have needles sticking out every centimeter of the branches, creating quite the death trap). Plus, we were all covered in mud because of the rain the night before. However, we made it to this tree which is the epitome of an African tree. As if that wasn’t cool enough it had these natural grooves in it making it easy to climb and look out over the whole Savannah. So pretty! Afterwards we packed up camp and made the treacherous drive back home again, with even worse roads because of the heavy rain, but luckily we made it. <o:p></o:p></div><div class="MsoNormal"><br />

Although the week days can become very routine with classes nothing beats the feeling of satisfaction and excitement when one of my kids begins to catch on, especially my little Bonny. He’s doing so well with his colors and numbers and I’m so proud of him! Not to mention I love playing soccer with them. Today, we taught them Down By the Banks and they loved it. Sometimes I wonder if they think of us as the funny mzungu’s (white people) that don’t know how to talk. No matter, I love each of them and am so grateful for each experience I have here. Not to mention, when the weekend rolls around, there is always something fun going on whether it be going to the circus in Arusha, hiking to the waterfalls, the hot springs, or just swimming at the nearest hotel. As you can probably tell, I’m enjoying my trip here tremendously. </div>My current project is Hope Village for Orphaned and Vulnerable Children. Mama Cecilia is about 30 years old and has created a miracle for these children. She has always felt a calling to help those less fortunate and proclaims that she loves this new family of her own. She started Hope Village about two months ago now, and came to Hostel Hoff looking for volunteers to help teach her five children learn English, as well as give them one on one quality time. </div><div class="MsoNormal"><br />

He is constantly running around causing trouble and has a hard time paying attention, yet he’s bright deep down inside. He’s able to write his ABC’s most of the time and loves to be held and is a great soccer player. She’s the most timid of the group but her wild side is definitely coming out. I’m slowly but surely getting her to open up to me which is easy with a little bit of love. Most of these kids came from abusive homes where their parents either hit them, gave them alcohol or neglected to care for them correctly which breaks my heart because they have each claimed a part of my heart and I love them each so much.</div><div class="MsoNormal"><br />

Bonny has a laugh that will steal your heart away with all the ease in the world. If he gets nervous, or doesn’t understand us, which is quite often, he just laughs, rolling his head forward. However, he’s not the brightest of the group. He has a hard time paying attention and somehow always ends up on his head, literally. I’m continually telling him “Kaa chini” meaning to sit down! Every once and a while though, Bonny will yell out the right answer when no one else knows it and it just about blows us away. It’s the best feeling in the world when you see them catching on and grasping the concept. </div><div class="MsoNormal"><br />

</div><div class="MsoNormal">Anitha, pronounced Anita. Most beautiful and brilliant 3 year old you’ll ever meet. Anitha knows 1-10, and is learning her ABC’s and colors in her second language. What child in America could ever do that? She is also one of my favorites because of her laugh, and her little spurts of singing. She loves singing for us, and will often stand in front of you or sit on your lap and talk and talk and talk in Swahili resulting in zero understanding, but complete love. I love her to death and know she’ll go far. She’s a very concentrated thinker and wants to get the answer right each time. She wont ever make a decision unless she’s certain she’s right. What a great trait huh? We could all learn from that I’m sure. </div><div class="MsoNormal"><br />
</div><div class="MsoNormal">This is my new family out here and I love them to death. Sure they take a whole lot of patience and effort, but I’m excited to see them each day. </div><div class="MsoNormal">Other than working at Hope Village I spend a lot of time swimming, traveling around this area of Tanzania to places like Arusha, Lake Chala, and Moshi, as well as talking with people at the hostel, reading, watching the few movies we have, shopping at the craft and art markets, and sleeping. </div><div class="MsoNormal">Each day I am here I am reminded of how grateful I am to live where I live, and to be blessed with all that I have. I’m thankful for paved roads, for air condition, for warm showers, for carpet! Oh how I miss carpet, for cleanliness, for hospitals, for owning more than two pairs of clothes, for my truck that runs, and most of all for my family and friends! These are each things that are either non-existent here, or very rare. We take for granted everything we have back at home. Next time you’re upset because you’re stuck in traffic, remember that you are sitting in a running car with air conditioning on a paved road. Next time you can’t sleep well at night, be grateful for the bed your sleeping on, for the blankets you have, and for the roof over your head. It truly is incredible the things we take for granted each day.<br />

I love Moshi, the language (Swahili)….most of the people… The people in the Hostel are great! They are from everywhere! We’ve got people from Sweden, England, the UK and America mostly. I feel as if I’m going to get home and not know how to talk. Do I speak with an English accent, an American accent, a Sweedish accent, or a Tanzanian accent? Each day it seems like new people arrive, and someone else leaves. It should steady out here though in about a week and we’ll have a group of us that are all staying here for a while.</div><br />

<div class="MsoNormal">The Hostel Hoff is great. The walls are all made out of cement and the windows are covered in bars but are always open to let in a breeze. The power goes off regularly for hours which is a bit unfortunate, but no problem. When it does we walk around with candles stuck in glass coke bottles. (They reuse all of their bottles here and so we can’t very well buy a soda or anything even because we don’t know how well they’ve been cleaned). There are lizards that climb all over the walls which freaked me out at first, but I’ve come to learn it’s a lot better than spiders, which the lizards eat. Another fun addition to the Hostel has been our cat Ashley (the name M’Liss and I decided on for it). Ashley does a wonderful job at destroying any lizard that tries to walk in the door. Our other family member is Paul, a cute little dog that loves lying around basking in the sunlight. All of the dogs here are the same breed which I find weird. They differ in color a bit but that is all. Back in America we have labs, and golden retrievers, and dalmatations and such. But here, its just one little dog who slightly resembles a Lab, but barely. </div><div class="MsoNormal"><br />

</div><div class="MsoNormal">Its taken a few days to figure out what we are doing exactly but I think that we have gotten it figured out. We’ve been visiting Tuleeni for the past few days and care planning to keep going there on the weekends. During the week, however, we will be working at a very new orphanage! It was a bit of a miracle really because we have really wanted to work in an orphanage but for a few days there we were going to have to end up working for a school teaching, which we didn’t really want to do (to teach in a school you need to know quite a bit of Swahili which we don’t)….but anyway. A few days ago a lady came to talk to Amanda at the Hostel saying that she just set up a new orphanage and are trying to get everything set up and she really needs volunteers so we volunteered in a second. It’s about a 30 minute taxi drive out of town and so we’re quite excited to be able to help her start setting things up, take care of the kids, play with them, and teach them a bit of English. </div><div class="MsoNormal"><br />

i have turned out to be a horrible blogger. turns out that posting every day seemed to be too much for me to keep up with. so out the window with that idea. oh well! i'll do my best to post a little bit each week while i am there if i have the time and ability.<br />

as for now! i have all my bags packed except for the little things like my toothbrush, and ipod, things you dont pack until last second, you know? i am getting so thrilled and excited for my adventure! its almost makes me nervous that i'm not nervous...but i have complete confidence that everything is going to work out perfectly and that its going to be experience of a lifetime! i cant wait to get over there and meet all the children, and the people i'll be staying with at the hostel. i'll have the opportunity to meet people from all over the world, in a foreign country, speaking a language i dont understand, eating strange food, yet all there for the same reason, to serve.<br />

it seems as if every memorable moment of my life involves this girl, which is why it may be easy for you to understand why this trip will be hard for me, not because i'll have to live without my best friend for two months, but because when i come home she will have moved out to college without me, and i will be going to a different college on my own...without her. we have been going through a bit of what some may call...separation anxiety for the past few months, but we've come to a good conclusion and i am comforted by what terra has told me.<br />

due to my nannying a family for the week, i was unable to get on and update my blog yesterday. it was a very eventful day however. <br />
<br />
1. trip to the medical supplies store. <br />
thanks to wonderful amazing kim averett at <a href="http://www.statmedical.com/">stat medical supply </a>i was able to get loads and loads of medical supplies. four box fulls to be exact. four boxs full of <em>gloves, bandaids, gauze, sizzors, tweezers, tape, antibiotic ointment, etc</em>. <strong>thank you</strong> again to all of you who made donations! they are going to a great cause.<br />
<br />
2. trip to barnes and noble.<br />
one thing you may not know about me is that i <strong>love</strong> good looking books. i go against the common cliche by <em>juding a book by its cover</em>. i love leather, i love frayed pages, and i love classics. one thing i really really wanted for my trip to africa was a journal to record all of my exciting adventures, and what do you know? barnes and noble had a beautiful leather journal just waiting for me! i love it already and can't wait to put it to use in only <strong>18 days</strong>! <br />
<br />
3. trip to walmart.<br />
mosquito spray--a definite must! tanzania is infested with tons and tons of mosquitos, which carry malaria...which i do not want to get! i'm taking pills, but i figured that for my own comfort and extended safety i better get the best of the best bug spray. i got to the aisle of bug spray and had to choose from <strong>10 different</strong> kinds of bug spray, 25% deet, 40% deet, deet free....how the <em>heck</em> am i supposed to know what is best? i decided to go with the sportsman <strong>MAX</strong> ...max just made it sound pretty grand. lets hope!<br />
<br />
4. trip to smiths.<br />
since walmart didn't carry it i had to make one more stop to smiths in search of a medicine called <strong>afterbite</strong> which is supposed to do wonders for itching mosquito bites! and seeing as how i'll get tons and tons of mosquito bites, i thought it just might be worth it to spend a little money to give me the slightest bit of comfort. <br />

anyway, enough about my weekend. the days are getting shorter and shorter. can you believe that i only have <b>22 days</b> left until i leave for <b>africa</b>?! that is not very many, just over three weeks, with so much left to do! first off, i have 11 soccer balls sitting in the corner of my room waiting to be deflated and stuffed into a suitcase. i also have to get together all of my visa information, go in for my routine check-up's to make sure everything is set before i leave the country for a few months. there is <b>much</b> to be done, with no so much time. we'll fit it all in though, and i'm very excited to leave!<br />

<b>four</b> shots, 1 prescription, and two very sore arms later, i am fully immunized for my expedition to africa! yesterday i received my typhoid, polio, yellow fever and flu shots, and got my malaria pills so that i am fully set and ready for anything that comes my way while i'm in africa.<br />

<span class="Apple-style-span" style="font-family: inherit;"> we will be staying in the <i>hostel hoff</i> in the township of <b>moshi, tanzania</b> for 65 days<b>.</b> i leave february 28th for a 27 hour plane ride until i reach my temporary home<b>.</b> we are going with two other girls from utah, making a grand total of four of us, each very excited for our adventure<b>.</b> </span><br />

<span class="Apple-style-span" style="font-family: inherit;">during our stay in tanzania we will be working in four different orphanages, a women's center, and helping construct a new orphanage<b>!</b> needless to say, it will keep us very busy for the short stay of 65 days<b>.</b> i cannot wait to meet all of the lovely children out there, if only i could bring them home with me {we'll have to see how many i can sneak into my suitcase}</span><br />
